  1. Prepare the marinade
    In a large bowl, combine soy sauce, brown sugar, sesame oil, gochujang, rice vinegar, minced garlic, grated ginger, honey, and grated pear. Whisk until well combined and the sugar has dissolved.
  2. Marinate the beef
    Add the cubed beef to the marinade, stirring to ensure all pieces are well coated. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor penetration.
  3. Prepare the skewers
    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated beef cubes onto skewers, leaving a small space between each piece to ensure even cooking.
  4. Prepare the glaze
    Reserve 3 tablespoons of the marinade before adding the beef. In a small saucepan, bring this reserved marinade to a boil, then reduce heat and simmer for 5 minutes until slightly thickened. This will be used as a glaze during cooking.
  5. Grill the skewers
    Preheat grill to medium-high heat (about 400°F/205°C). Grill the skewers for 2-3 minutes per side, or until the beef reaches desired doneness (about 135°F/57°C for medium-rare). Brush with the reserved glaze during the last minute of cooking.
  6. Rest and garnish
    Remove skewers from the grill and let rest for 3-5 minutes. Sprinkle with sliced green onions and toasted sesame seeds before serving.
