  1. Prepare the taro
    Thoroughly wash the taro roots under cold running water. Using a sharp knife, carefully peel the brown skin off the taro roots. Slice the taro into very thin rounds, about 1/16-inch thick. For best results, use a mandoline slicer to ensure even thickness.
  2. Soak the slices
    Place the taro slices in a large bowl of cold water and soak for 10 minutes to remove excess starch. Drain thoroughly and pat completely dry with paper towels or a clean kitchen towel. This is crucial for achieving crispiness.
  3. Season the chips
    In a large bowl, toss the dried taro slices with olive oil until evenly coated. In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper (if using). Sprinkle this seasoning mixture over the oiled taro slices and toss gently to ensure even coating. Add the fresh rosemary if using.
  4. For oven baking
    Preheat your oven to 375°F (190°C). Arrange the seasoned taro slices in a single layer on baking sheets lined with parchment paper. Make sure the slices don't overlap. Bake for 15-20 minutes, flipping halfway through, until the chips are golden brown and crispy. Watch carefully during the last few minutes to prevent burning.
  5. For air frying
    Preheat your air fryer to 350°F (175°C). Working in batches, arrange the seasoned taro slices in a single layer in the air fryer basket. Air fry for 8-10 minutes, shaking the basket halfway through, until the chips are golden brown and crispy. Adjust time as needed depending on your air fryer model.
  6. Serve and enjoy
    Transfer the chips to a serving bowl and allow them to cool slightly. They will crisp up further as they cool. Sprinkle with fresh parsley for garnish if desired. Serve immediately or store in an airtight container for up to 3 days.
