  1. Prepare the kale
    Remove the thick stems from the kale leaves and tear the leaves into bite-sized pieces, about 2-3 inches in size. Make sure the kale is completely dry after washing to ensure crispy chips.
  2. Season the kale
    Place the kale pieces in a large bowl. Drizzle with olive oil and massage the oil into the leaves with your hands, making sure each piece is lightly coated. Sprinkle with salt, pepper, and any optional seasonings you're using.
  3. Arrange for baking
    Preheat your oven to 300°F (150°C). Spread the kale in a single layer on 1-2 large baking sheets. Ensure the pieces aren't overlapping to allow for even crisping.
  4. Bake to perfection
    Place the baking sheets in the oven and bake for 10-15 minutes, rotating the pans halfway through. Watch closely as kale can quickly burn. The chips are done when they're crispy but still green, not brown.
  5. Cool and serve
    Remove from the oven and let cool for 2-3 minutes on the baking sheet. The chips will continue to crisp as they cool. Transfer to a serving bowl and enjoy immediately, as they're best when fresh.
