  1. Brown the meat
    In a large pot or Dutch oven, brown the ground beef over medium-high heat until no longer pink, breaking it up with a wooden spoon as it cooks. Drain excess fat if necessary.
  2. Add aromatics
    Add the diced onion to the pot with the beef and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Season the base
    Sprinkle the taco seasoning, cumin, and oregano over the meat mixture. Stir to coat the meat evenly with the spices and cook for 1 minute to bloom the flavors.
  4. Add the liquids and vegetables
    Pour in the beef broth, diced tomatoes with green chilies, and tomato sauce. Stir to combine. Add the black beans, pinto beans, and corn. Bring the mixture to a boil.
  5. Simmer the soup
    Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking.
  6. Season and serve
    Taste and adjust seasoning with salt and pepper as needed. Ladle the hot soup into bowls and serve with your choice of toppings, such as shredded cheese, sour cream, diced avocado, fresh cilantro, lime wedges, or crushed tortilla chips.
