  1. Prepare the fruit
    Rinse all dried fruits thoroughly under cold water. Chop the dried apricots and prunes into bite-sized pieces. Peel and dice the fresh apple and pear.
  2. Combine ingredients
    In a large pot, combine all the dried and fresh fruits with the water, orange juice, sugar, cinnamon stick, and cloves. Stir well to ensure everything is evenly distributed.
  3. Simmer the soup
    Bring the mixture to a gentle boil over medium heat, then reduce to low heat and simmer uncovered for about 20 minutes, or until the dried fruits have softened and the fresh fruits are tender.
  4. Add finishing touches
    Remove the pot from heat and add the lemon juice. Remove the cinnamon stick and cloves. If a thicker consistency is desired, mix the tapioca or cornstarch with 2 tablespoons of cold water until smooth, then stir into the hot soup and return to low heat for 2-3 minutes until thickened.
  5. Serve or chill
    The soup can be served warm immediately or chilled in the refrigerator for at least 2 hours. Traditionally, it's served both ways depending on the season - warm in winter and cold in summer.
