  1. Prepare the berries
    Rinse the blueberries thoroughly if using fresh ones. If using frozen berries, you can use them directly without thawing.
  2. Combine ingredients
    In a large saucepan, combine the blueberries, water, sugar, cinnamon stick, and cloves. Bring to a gentle boil over medium heat.
  3. Simmer the soup
    Reduce heat and let the mixture simmer for about 10-15 minutes until the berries are soft and have released their juices. Stir occasionally to prevent sticking.
  4. Thicken the soup
    In a small bowl, mix the potato starch or cornstarch with the cold water until smooth. Gradually whisk this mixture into the simmering soup. Continue to stir until the soup thickens slightly, about 2-3 minutes.
  5. Add finishing touches
    Remove from heat and stir in the lemon juice, vanilla extract, and a pinch of salt. Remove the cinnamon stick and cloves.
  6. Serve or chill
    The soup can be served warm immediately or chilled in the refrigerator for at least 2 hours. Garnish with fresh mint leaves before serving.
