  1. Prepare the vegetables
    Melt 2 tablespoons of butter in a large pot over medium heat. Add the diced onions and cook until translucent, about 5 minutes. Add the carrots and continue cooking for another 3 minutes.
  2. Create the soup base
    Add the cubed potatoes to the pot along with the fish stock, bay leaf, and allspice berries. Bring to a boil, then reduce heat and simmer until the potatoes are fork-tender, about 15 minutes.
  3. Add the salmon
    Gently add the salmon cubes to the pot. Simmer for 5 minutes or until the salmon is just cooked through. Be careful not to overcook the salmon as it will continue to cook in the hot broth.
  4. Finish the soup
    Stir in the heavy cream and the remaining tablespoon of butter. Add the chopped dill and lemon juice. Season with salt and white pepper to taste. Remove from heat and let stand for 5 minutes before serving.
  5. Serve
    Ladle the soup into warm bowls. Garnish with additional fresh dill and serve with rye bread on the side for an authentic Finnish meal experience.
