
Spicy Shrimp Quesadillas
Zesty seafood quesadillas with melted cheese and lime crema

Prepare the shrimpIn a medium bowl, toss the shrimp with 1 tablespoon olive oil, minced garlic, chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Let marinate for 5 minutes while preparing other ingredients.

Cook the shrimpHeat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes until pink and opaque. Remove from heat, let cool slightly, then roughly chop into bite-sized pieces.

Make the lime cremaIn a small bowl, combine the sour cream, lime juice, lime zest, and 2 tablespoons of chopped cilantro. Season with a pinch of salt and mix well. Set aside.

Assemble the quesadillasLay out 4 tortillas on a clean work surface. Evenly distribute half of the cheese among the tortillas. Top with the chopped shrimp, diced bell pepper, and remaining cilantro. Sprinkle the remaining cheese on top and cover with the remaining tortillas.

Cook the quesadillasHeat a large skillet or griddle over medium heat. Add 1/2 teaspoon of the remaining olive oil. Place one quesadilla in the pan and cook for 2-3 minutes until golden brown. Carefully flip and cook for another 2-3 minutes until the cheese is melted and the tortilla is crispy. Repeat with remaining quesadillas, adding more oil as needed.

ServeCut each quesadilla into quarters. Serve hot with the lime crema for dipping, garnished with additional cilantro if desired.
