  1. Marinate the pork
    In a bowl, mix 2 tablespoons olive oil, 2 minced garlic cloves, paprika, oregano, cumin, vinegar, salt and pepper. Add the pork loin slices and toss to coat evenly. Let marinate for at least 10 minutes while preparing other ingredients.
  2. Prepare the garlic mayo
    In a small bowl, mix the mayonnaise with the remaining minced garlic clove. Season with a pinch of salt and set aside.
  3. Cook the peppers
    Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the green pepper strips and cook until softened but still slightly crisp, about 5-6 minutes. Remove from the pan and set aside.
  4. Cook the marinated pork
    In the same skillet, add the remaining tablespoon of olive oil and increase heat to medium-high. Cook the marinated pork slices for about 2-3 minutes per side until golden brown and cooked through.
  5. Toast the bread
    Slice the baguettes lengthwise but not all the way through. Open them up and lightly toast them under a broiler or in a dry pan for about 1 minute until just crisp on the inside.
  6. Assemble the sandwiches
    Spread the garlic mayo on both sides of the interior of each baguette. Layer with cooked pork loin slices, sautéed green peppers, and tomato slices. Season with a little more salt and pepper if desired.
