Prepare the breadLightly toast the bread slices. While still warm, rub one side of each slice with the cut side of the garlic clove. This infuses the bread with subtle garlic flavor without overpowering the sandwich.

Assemble the sandwichesBrush the outer sides of each bread slice with olive oil. On the non-garlic side of two slices, layer the Manchego cheese, followed by the jamón serrano and roasted red pepper slices. Sprinkle with a pinch of smoked paprika and chopped parsley. Top with the remaining bread slices, garlic-rubbed side facing inward.

Heat the panHeat a large skillet or griddle over medium heat. Add the butter and allow it to melt and coat the cooking surface evenly. The combination of butter and olive oil will create a beautifully golden crust with Spanish flavor notes.
