  1. Prepare the broth
    In a large pot, bring the chicken broth to a simmer. Add the crushed saffron threads, stir well, and keep warm over low heat.
  2. Brown the meats
    Heat the olive oil in a 15-inch paella pan or large, shallow skillet over medium-high heat. Season the chicken pieces with salt and pepper, then add to the pan and cook until browned on all sides, about 5-7 minutes. Add the chorizo and cook for another 2 minutes until slightly crisp. Remove the meats and set aside.
  3. Create the sofrito
    In the same pan, add the chopped onion and sauté until soft and translucent, about 5 minutes. Add the minced garlic and diced bell pepper and cook for another 3 minutes. This flavor base, known as sofrito, is essential for an authentic paella.
  4. Add rice and broth
    Return the cooked meats to the pan, spreading them evenly. Add the rice and stir for 1-2 minutes to coat with oil. Pour in the saffron-infused broth and bring to a boil. Reduce heat to medium-low and simmer uncovered for 15 minutes, without stirring.
  5. Add seafood and peas
    After 15 minutes, arrange the shrimp and mussels on top of the rice, pressing them slightly into the mixture. Scatter the peas evenly across the surface. Continue to cook without stirring for another 10 minutes, or until the rice is tender and the seafood is cooked through.
  6. Develop the socarrat
    In the last 5 minutes of cooking, increase the heat to medium-high to create the socarrat—the crispy, caramelized layer of rice at the bottom of the pan that's highly prized in a good paella. Listen for a gentle crackling sound, but be careful not to burn the rice.
  7. Rest and garnish
    Remove the pan from heat, cover with a clean kitchen towel, and let the paella rest for 5 minutes. Garnish with fresh chopped parsley and arrange lemon wedges around the edge of the pan.
