  1. Prepare the batter
    In a large bowl, whisk together the chickpea flour, water, 2 tablespoons olive oil, salt, and pepper until smooth. Let the batter rest at room temperature for at least 30 minutes to allow the flour to hydrate fully.
  2. Preheat the pan
    Place a 12-inch cast iron skillet or heavy oven-safe pan in the oven and preheat to 450°F (230°C). Allow the pan to heat for at least 10 minutes until very hot.
  3. Cook the socca base
    Carefully remove the hot pan from the oven. Add 1 tablespoon of olive oil and swirl to coat the bottom. Pour in the batter and quickly tilt the pan to spread it evenly. Sprinkle with rosemary. Return the pan to the oven and bake for 12-15 minutes until the edges are crisp and golden brown.
  4. Add toppings
    Remove the pan from the oven. Scatter the cherry tomatoes, olives, red onion, and feta cheese over the top of the socca. Sprinkle with fresh thyme.
  5. Finish baking
    Return the pan to the oven and bake for an additional 5-7 minutes until the toppings are heated through and the edges are crispy.
  6. Serve
    Remove the socca pizza from the oven. Garnish with fresh basil leaves and drizzle with additional olive oil. Cut into wedges and serve immediately while hot and crispy.
