Prepare the cauliflowerPulse cauliflower florets in a food processor until they resemble rice or fine crumbs. Place in a microwave-safe bowl and microwave for 5 minutes. Allow to cool completely, then transfer to a clean kitchen towel and squeeze out as much moisture as possible.

Make the crust mixtureIn a large bowl, combine the cauliflower rice, beaten egg, ½ cup mozzarella cheese, Parmesan cheese, dried herbs, garlic powder, salt, and pepper. Mix well until all ingredients are thoroughly incorporated and the mixture holds together.

Form and pre-bake the crustPreheat oven to 425°F (220°C). Line a baking sheet with parchment paper and spray lightly with cooking spray. Spread the cauliflower mixture into a circle about ¼-inch thick. Bake for 15-20 minutes until golden brown and firm.

Add toppingsRemove the pre-baked crust from the oven. Spread marinara sauce evenly over the crust, leaving a small border around the edges. Sprinkle with the remaining mozzarella cheese and arrange your toppings (bell peppers, mushrooms, pepperoni) on top.

Final bakeReturn the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly and the edges are crispy and golden brown. For extra browning, broil for the last 1-2 minutes, watching carefully to prevent burning.
