  1. Prepare the sauce
    In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, sesame oil, brown sugar, and red pepper flakes (if using). Set aside.
  2. Blanch the broccoli
    Bring a pot of water to boil. Add broccoli florets and blanch for 2 minutes until bright green but still crisp. Drain immediately and rinse under cold water to stop the cooking process. Set aside.
  3. Cook the shrimp
    Heat 2 tablespoons of vegetable oil in a large wok or skillet over high heat. Add shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque. Transfer to a plate.
  4. Sauté aromatics
    In the same wok, add the remaining 1 tablespoon of oil. Add minced garlic and grated ginger, stirring constantly for 30 seconds until fragrant, being careful not to burn.
  5. Combine and stir-fry
    Add the blanched broccoli to the wok and stir-fry for 1 minute. Return the shrimp to the wok. Pour in the prepared sauce and toss to coat everything evenly.
  6. Thicken the sauce
    Give the cornstarch mixture a quick stir and pour it into the wok. Stir constantly as the sauce thickens, about 1-2 minutes.
  7. Serve
    Transfer to a serving dish. Garnish with sliced green onions and toasted sesame seeds. Serve immediately over steamed rice or noodles.
