
Sesame Ginger Tofu Stir-Fry

Prepare the tofuPat the pressed tofu dry with paper towels. In a medium bowl, toss the tofu cubes with cornstarch until evenly coated. This will help create a crispy exterior when cooking.

Cook the tofuHeat 2 tablespoons of sesame oil in a large wok or skillet over medium-high heat. Add the tofu cubes and cook for 2-3 minutes on each side until golden brown and crispy. Remove from the wok and set aside.

Stir-fry the vegetablesIn the same wok, add the remaining 1 tablespoon of sesame oil. Add the broccoli and carrots first, stir-frying for 2 minutes. Then add the bell peppers and snow peas, continuing to stir-fry for another 2 minutes until the vegetables are crisp-tender.

Add aromaticsAdd the minced garlic and grated ginger to the vegetables. Stir-fry for 30 seconds until fragrant, being careful not to burn the garlic.

Make the sauceIn a small bowl, whisk together the soy sauce, rice vinegar, and honey or maple syrup. Pour this sauce over the vegetables in the wok and stir to combine.

Combine and finishReturn the crispy tofu to the wok, gently tossing to coat with the sauce. Cook for another 1-2 minutes until everything is heated through and the sauce has slightly thickened.

Garnish and serveRemove from heat and sprinkle with toasted sesame seeds and sliced green onions. Serve immediately over steamed rice or noodles for a complete meal.
