  1. Prepare the gulaman
    In a medium saucepan, bring 4 cups of water to a boil. Add the gulaman powder and stir until completely dissolved. Pour the mixture into a square pan or container and let it cool to room temperature. Refrigerate for at least 1 hour or until set. Once set, cut into 1/2-inch cubes and set aside.
  2. Cook the sago pearls
    Bring 6 cups of water to a boil in a large pot. Add the dried sago pearls and cook according to package instructions, usually about 15 minutes or until translucent with a small white dot in the center. Stir occasionally to prevent sticking. Once cooked, drain the sago in a colander and rinse under cold running water to remove excess starch. Set aside.
  3. Make the simple syrup
    In a separate saucepan, combine 4 cups of water and brown sugar. Bring to a boil over medium heat, stirring constantly until the sugar is completely dissolved. Lower the heat and simmer for 5 minutes. Remove from heat and add the vanilla extract and banana extract if using. Allow the syrup to cool completely.
  4. Combine ingredients
    In a large pitcher, combine the cooled simple syrup, cooked sago pearls, and gulaman cubes. Stir gently to mix. If using sweetened condensed milk, add it now and stir until well combined. Refrigerate for at least 1 hour to chill thoroughly.
  5. Serve the drink
    To serve, fill glasses with ice cubes, pour the sago't gulaman mixture over the ice, and garnish with fresh fruits if desired. Stir gently before drinking to distribute the sago and gulaman evenly.
