Prepare the pandan gelatinIn a medium saucepan, combine the pandan-flavored gelatin powder with 2 cups of water and ½ cup sugar. Bring to a boil while stirring constantly until the gelatin and sugar are completely dissolved. Pour into a shallow pan and refrigerate for 2-3 hours or until firm.

Cut the gelatinOnce the gelatin has set, cut it into small cubes approximately ½-inch in size. Place the cubes in a large mixing bowl and set aside.

Prepare the coconutAdd the young coconut meat strips to the bowl with the gelatin cubes. If using nata de coco, add it to the bowl as well.

Make the cream mixtureIn a separate large bowl, combine the sweetened condensed milk, coconut milk, evaporated milk, and remaining ½ cup sugar. Stir well until the sugar is completely dissolved. Add the pandan extract or flavoring and green food coloring (if using). Mix until the color is evenly distributed.

Combine ingredientsPour the cream mixture over the gelatin and coconut. Gently fold everything together, ensuring the gelatin and coconut are evenly coated with the cream mixture.

Chill the dessertCover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld together and the dessert to chill thoroughly.

Serve and garnishBefore serving, give the dessert a gentle stir. Spoon into individual serving glasses or a large serving bowl. Top with whipped cream and sprinkle with grated cheese if desired.
