  1. Prepare the jelly
    If using canned grass jelly, drain thoroughly and cut into 1/2-inch cubes. If using powdered grass jelly, prepare according to package instructions, allow to set, then cut into cubes.
  2. Make the brown sugar syrup
    If you don't have pre-made brown sugar syrup, combine 1/2 cup brown sugar with 1/4 cup water in a small saucepan. Heat over medium heat, stirring until sugar dissolves completely. Let cool before using.
  3. Prepare tapioca pearls
    If using tapioca pearls, cook according to package instructions until they are translucent with a small opaque center. Rinse with cold water and drain well.
  4. Assemble individual servings
    In each serving glass, add a quarter of the grass jelly cubes, followed by a quarter of the tapioca pearls if using. Add basil seeds and diced fruit if desired.
  5. Add liquids
    Pour 1 cup of cold water over the jelly in each glass, followed by 2 tablespoons of brown sugar syrup, 1/2 tablespoon of honey, and 1/4 cup of evaporated milk or coconut milk.
  6. Add ice and serve
    Top each glass with crushed ice, garnish with fresh mint leaves, and serve immediately with a wide straw and a long spoon to enjoy both the drink and the jelly pieces.
