  1. Prepare the spread
    In a small bowl, mix together mayonnaise, horseradish sauce, and Dijon mustard until well combined. Season with salt and pepper to taste.
  2. Toast the bread
    Lightly butter each slice of sourdough bread on one side. Toast in a large skillet over medium heat until golden brown, about 2 minutes per side. Alternatively, use a toaster and then butter the slices. Allow to cool slightly.
  3. Assemble the first layer
    Spread the mayonnaise mixture on one side of 4 toast slices. Place 2 slices on a cutting board, spread side up. Layer each with lettuce, tomato slices, and half of the roast beef. Season with salt and pepper.
  4. Build the middle layer
    Top each sandwich with another slice of toast, spread side up. Add red onion slices, bacon strips, and remaining roast beef. Season lightly with additional pepper if desired.
  5. Complete the sandwich
    Crown each sandwich with the remaining toast slices, spread side down. Press gently to compact the sandwich.
  6. Cut and secure
    Using a sharp serrated knife, cut each sandwich diagonally into quarters. Secure each quarter with a wooden sandwich pick inserted from the top through the center.
  7. Serve immediately
    Arrange the sandwich quarters on plates with a side of potato chips or a small salad if desired. Serve immediately while the toast is still crisp and the fillings are fresh.
