
Ricotta Toast with Honey and Figs
Creamy ricotta on crisp toast with sweet honey and fresh figs

Toast the breadBrush both sides of each bread slice lightly with olive oil. Toast in a toaster, under a broiler, or in a skillet over medium heat until golden brown and crisp around the edges, about 2-3 minutes per side.

Prepare the ricottaIn a small bowl, mix the ricotta with 1 tablespoon of honey, lemon zest, a pinch of salt, and a crack of black pepper. Stir until well combined and creamy.

Assemble the toastSpread a generous layer of the ricotta mixture (about 1/4 cup) on each slice of toast, leaving a small border around the edges.

Add the figsArrange the quartered figs on top of the ricotta, gently pressing them into the cheese slightly to ensure they stay in place.

Finish and garnishDrizzle each toast with remaining honey, sprinkle with chopped pistachios and fresh thyme leaves. Finish with a light sprinkle of flaky sea salt and a final drizzle of olive oil.
