  1. Prepare the sweet potatoes
    Wash and dry the sweet potato thoroughly. Using a sharp knife, slice the sweet potato lengthwise into 1/4-inch thick slices to create 'toast' shapes. You should get about 6-8 slices depending on the size of your potato.
  2. Toast the sweet potato slices
    Brush both sides of each sweet potato slice with olive oil. Place the slices in a toaster, toaster oven, or regular oven (at 400°F/200°C) and toast for 2-3 cycles in a toaster or 15 minutes in an oven until the slices are tender and slightly crisp around the edges.
  3. Make the tahini sauce
    While the sweet potato is toasting, whisk together the tahini, lemon juice, maple syrup, water, and a pinch of salt in a small bowl until smooth and creamy. Add more water if needed to reach a drizzling consistency.
  4. Season and assemble
    When the sweet potato slices are done, place them on a serving plate. Sprinkle each slice with a little ground cinnamon and a pinch of sea salt.
  5. Add toppings and serve
    Drizzle the tahini sauce generously over the sweet potato slices. Sprinkle with pomegranate seeds, chopped pistachios, sesame seeds, and fresh mint leaves. Serve immediately while still warm.
