
Pumpkin and Shrimp Congee

Prepare the riceIn a large pot, add the rinsed rice and chicken broth or water. Bring to a boil over high heat, then reduce heat to low. Simmer uncovered for about 30 minutes, stirring occasionally to prevent sticking, until the rice begins to break down.

Add the pumpkinAdd the cubed pumpkin to the pot and continue to simmer for another 20-25 minutes, stirring occasionally until the pumpkin is tender and starting to dissolve slightly into the congee. The congee should be thick and creamy.

Season the congeeStir in the ginger, garlic, soy sauce, sesame oil, and white pepper. Allow to simmer for an additional 5 minutes to blend the flavors. If the congee becomes too thick, add a little more broth or water to reach your desired consistency.

Cook the shrimpAdd the chopped shrimp to the congee and gently stir. Cook for 3-4 minutes until the shrimp turn pink and are just cooked through. Be careful not to overcook as shrimp can become rubbery.

Final adjustmentsTaste the congee and adjust seasoning with additional soy sauce or white pepper if needed. The texture should be smooth and creamy with tender pieces of pumpkin and shrimp throughout.

Serve and garnishLadle the hot congee into serving bowls. Garnish each bowl with sliced green onions, chopped cilantro, and crispy fried shallots if using. Serve immediately while hot.
