Prepare the riceRinse the basmati rice under cold water until the water runs clear. Soak the rice in cold water for 30 minutes, then drain well. This helps remove excess starch and produces fluffy, separate grains.

Toast the spicesHeat the ghee or clarified butter in a large, heavy-bottomed pot over medium heat. Add the cinnamon sticks, cardamom pods, cloves, bay leaf, and cumin seeds. Sauté for 30-60 seconds until fragrant, being careful not to burn the spices.

Sauté the onionsAdd the sliced onions to the pot with the toasted spices. Cook, stirring occasionally, until the onions turn golden brown, about 5-7 minutes. This caramelization adds depth of flavor to the pilaf.

Add rice and liquidAdd the drained rice to the pot and gently stir to coat the grains with the ghee and spices. Cook for 2 minutes, stirring gently. Pour in the broth and add salt. If using saffron, add the soaked threads along with the soaking liquid. Bring the mixture to a boil.

Simmer and steamOnce boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 15-18 minutes, or until all the liquid is absorbed and the rice is tender. Do not stir during this time.

Rest and fluffRemove the pot from heat and let it rest, still covered, for 5-10 minutes. This allows the rice to finish steaming and the flavors to settle. After resting, gently fluff the rice with a fork, being careful not to break the grains.

Garnish and serveTransfer the pilaf rice to a serving dish. Remove and discard the whole spices if desired. Garnish with fresh chopped cilantro and toasted nuts. Serve hot as a side dish or as a base for stews and curries.
