Prepare the riceRinse the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain well. This helps remove excess starch and ensures fluffy, separate grains.

Heat the gheeIn a medium-sized heavy-bottomed pot or pan, heat the ghee over medium heat until it melts completely. Ghee gives a rich, nutty flavor that's essential for authentic jeera rice.

Toast the spicesAdd the cumin seeds to the hot ghee and allow them to sizzle and turn slightly darker (about 30 seconds). Then add the bay leaf, cinnamon stick, and cardamom pods. Stir for another 30 seconds until fragrant. Be careful not to burn the spices.

Add the riceAdd the drained rice to the pot and gently stir to coat all the grains with the ghee and spices. Sauté for 2-3 minutes until the rice looks slightly translucent around the edges.

Cook the riceAdd 2 cups of water and salt to the pot. Bring to a boil, then reduce the heat to low, cover with a tight-fitting lid, and simmer for 15 minutes. Do not lift the lid during cooking as this releases the steam needed to cook the rice.

Rest and fluffOnce the cooking time is complete, turn off the heat and let the rice rest, covered, for 5 minutes. Then remove the lid and gently fluff the rice with a fork to separate the grains.

Garnish and serveRemove the whole spices (bay leaf, cinnamon stick, and cardamom pods) if desired. Transfer the jeera rice to a serving dish and garnish with fresh chopped cilantro and mint leaves if using. Serve hot alongside your favorite curry or dal.
