
Pad Thai Noodles
Classic Thai stir-fried rice noodles with a tangy-sweet sauce

Prepare the noodlesSoak the rice noodles in warm water for 15-20 minutes until they're soft but still firm. Drain well and set aside. While noodles soak, mix the sauce by combining fish sauce, brown sugar, tamarind paste, rice vinegar, and red pepper flakes in a small bowl.

Cook the proteinHeat 2 tablespoons of oil in a large wok or skillet over medium-high heat. Add garlic and stir-fry for 30 seconds until fragrant. Add shrimp and cook for 2-3 minutes until they turn pink and opaque. Transfer to a plate and set aside.

Make the egg scrambleAdd the remaining tablespoon of oil to the wok. Pour in the beaten eggs and swirl to coat the pan. Let cook for 30 seconds, then gently scramble until just set but still moist. Push to the side of the wok.

Stir-fry the noodlesAdd the drained noodles to the wok and pour the prepared sauce over them. Toss continuously for 2-3 minutes until the noodles absorb the sauce and become slightly caramelized.

Combine all ingredientsReturn the cooked shrimp to the wok. Add bean sprouts, green onions, and half of the chopped peanuts. Toss everything together for another 1-2 minutes until well combined and heated through.

Serve and garnishTransfer the Pad Thai to serving plates. Garnish with remaining chopped peanuts, fresh cilantro, extra bean sprouts, and lime wedges. Serve immediately while hot.
