
Pad Thai Nachos
A fusion dish combining Thai flavors with crispy tortilla chips

Prepare the chipsPreheat the oven to 375°F (190°C). Lightly brush the wonton wrappers with oil on both sides and arrange in a single layer on baking sheets. Bake for 7-8 minutes until golden and crispy, watching carefully to prevent burning. Set aside to cool.

Cook the chickenHeat 1 tablespoon of oil in a large skillet over medium-high heat. Add the sliced chicken and cook for 5-6 minutes until browned and cooked through. Remove from the pan and set aside.

Make the Pad Thai sauceIn a small bowl, whisk together fish sauce, brown sugar, rice vinegar, lime juice, and peanut butter until well combined. If the sauce is too thick, add 1-2 tablespoons of water to achieve desired consistency.

Season the chickenReturn the cooked chicken to the pan and pour half of the Pad Thai sauce over it. Toss to coat evenly and cook for an additional 2 minutes until the sauce thickens and clings to the chicken.

Assemble the nachosArrange the crispy wonton chips on a large serving platter. Top with the sauced chicken and sprinkle with Monterey Jack cheese. Place under the broiler for 1-2 minutes until the cheese melts.

Add the fresh toppingsRemove from the broiler and immediately top with bean sprouts, green onions, cilantro, and crushed peanuts. Drizzle the remaining Pad Thai sauce over the top.
