Instructions
-
Prepare the meat mixtureHeat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 2-3 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant. Add ground beef and break it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
-
Season the meatOnce the beef is browned, drain excess fat if necessary. Add taco seasoning and 1/4 cup water. Stir to combine. Add the drained black beans and simmer for 2-3 minutes until the liquid is mostly absorbed and the mixture is thick.
-
Arrange and layer the nachosPreheat oven to 400°F (200°C). Spread tortilla chips in an even layer on a large, oven-safe platter or baking sheet. Spoon the beef and bean mixture evenly over the chips, then sprinkle with shredded cheese, ensuring good coverage.
-
Bake the nachosPlace the nachos in the preheated oven and bake for 5-7 minutes, or until the cheese is completely melted and starting to bubble. Keep a close eye on them to prevent burning.
-
Add the fresh toppingsRemove the nachos from the oven. Immediately top with pico de gallo or salsa, diced avocado or guacamole, dollops of sour cream, sliced jalapeños, chopped cilantro, and sliced green onions.
-
Serve immediatelyServe the nachos right away while they're still hot and the cheese is melted. For easier sharing, consider placing small plates around the platter so guests can serve themselves without making a mess.
