  1. Prepare the meat
    Slice the beef sirloin into very thin strips, about ¼-inch thick and 3-4 inches long. Place in a large bowl and set aside.
  2. Make the suya spice mix
    In a medium bowl, combine the ground peanuts, paprika, cayenne pepper, garlic powder, onion powder, ground ginger, bouillon powder, salt, and ground cloves. Mix thoroughly to create the suya spice blend (also known as yaji).
  3. Marinate the meat
    Drizzle the sliced beef with vegetable oil and toss to coat evenly. Add about ¾ of the suya spice mix to the meat, reserving the remainder for serving. Mix well, ensuring each piece is thoroughly coated. Cover and let marinate for at least 30 minutes, or refrigerate for up to 4 hours.
  4. Prepare for grilling
    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated beef strips onto skewers, folding them back and forth in an accordion style, about 4-5 pieces per skewer.
  5. Grill the suya
    Preheat a grill or grill pan to medium-high heat. Place the skewers on the grill and cook for 3-4 minutes per side, or until the meat is cooked through with nice char marks. Be careful not to overcook as the thin slices can dry out quickly.
  6. Prepare the garnish
    While the meat is grilling, arrange the sliced red onions and tomatoes on a serving platter.
  7. Serve
    When the suya is done, remove from the grill and immediately sprinkle with some of the reserved spice mix while still hot. Serve hot with the sliced onions, tomatoes, and the remaining spice mix on the side for dipping.
