Prepare the meat mixtureIn a large bowl, combine the ground beef, finely minced onion, minced garlic, chopped parsley, and cilantro. Add the cumin, coriander, paprika, cinnamon, cayenne, salt, and black pepper. Mix gently with your hands until all ingredients are evenly incorporated, being careful not to overmix.

Form the keftaDivide the meat mixture into 8-12 equal portions. Take each portion and shape it into an oblong cylinder around a soaked wooden skewer, pressing firmly to ensure the meat adheres to the skewer. The meat should be about 1-inch thick and 4-5 inches long. Place the prepared skewers on a tray and refrigerate for at least 30 minutes to firm up.

Prepare the grill or panIf grilling, preheat your grill to medium-high heat (about 400°F/200°C). If cooking indoors, heat a cast-iron grill pan or skillet over medium-high heat and lightly brush with olive oil to prevent sticking.

Cook the keftaBrush the kefta skewers lightly with olive oil. Place them on the preheated grill or pan and cook for 8-10 minutes, turning occasionally, until they are browned on all sides and cooked through but still juicy (internal temperature should reach 160°F/71°C).

Prepare the yogurt sauceWhile the kefta is cooking, prepare a simple yogurt sauce by mixing the Greek yogurt with a pinch of salt, a drizzle of olive oil, and a sprinkle of chopped fresh herbs if desired.

Serve the keftaTransfer the cooked kefta skewers to a serving platter. Serve hot with the yogurt sauce on the side, alongside warm pita bread, fresh tomato and cucumber salad, or couscous for a complete meal.
