  1. Prepare the marinade
    In a large bowl, whisk together lemon juice, yogurt, olive oil, minced garlic, tomato paste, paprika, cumin, cinnamon, oregano, cayenne pepper, salt, and black pepper until well combined.
  2. Marinate the chicken
    Add the cubed chicken to the marinade and toss to coat evenly. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow flavors to develop fully.
  3. Prepare for cooking
    If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning. Preheat your grill to medium-high heat or preheat your oven to 425°F (220°C).
  4. Skewer the chicken
    Thread the marinated chicken pieces onto skewers, leaving a small space between each piece to ensure even cooking. Discard any remaining marinade.
  5. Grill the chicken
    Place the skewers on the preheated grill and cook for about 12-15 minutes, turning occasionally, until chicken is fully cooked (internal temperature of 165°F/74°C) and slightly charred on the outside. If using an oven, place on a baking sheet and bake for 15-18 minutes.
  6. Rest and serve
    Remove the skewers from heat and let them rest for 5 minutes. Garnish with fresh parsley and serve hot with lemon wedges, warm pita bread, garlic sauce (toum), and a side of tabbouleh or hummus.
