Instructions

  1. Prepare the wings
Preheat oven to 400°F (200°C). Line a large baking sheet with aluminum foil and place a wire rack on top. Pat chicken wings dry with paper towels and place them in a large bowl.
  2. Season the wings
In a small bowl, mix together salt and pepper. Sprinkle over wings and toss to coat evenly. Arrange wings in a single layer on the wire rack, making sure they don't touch.
  3. Bake the wings
Bake for 30-35 minutes until the skin is crispy and golden brown, and the wings are cooked through (internal temperature should reach 165°F/74°C).
  4. Prepare the maple sriracha glaze
While the wings are baking, combine maple syrup, sriracha, soy sauce, rice vinegar, lime juice, minced garlic, and grated ginger in a small saucepan. Bring to a simmer over medium heat and cook for about 5-7 minutes, stirring occasionally, until the sauce has thickened slightly.
  5. Glaze the wings
When wings are done, transfer them to a large bowl. Pour half of the glaze over the wings and toss until evenly coated. Return the wings to the wire rack and bake for an additional 5-8 minutes until the glaze is sticky and caramelized.
  6. Final glazing
Remove wings from the oven and transfer them back to the bowl. Pour the remaining glaze over the wings and toss to coat.
  7. Serve
Transfer the wings to a serving platter. Sprinkle with sesame seeds and sliced green onions. Serve immediately while hot.
