  1. Prepare the spice base
    Heat the vegetable oil in a large pot over medium heat. Add the minced garlic, grated ginger, and bruised lemongrass. Sauté for 2-3 minutes until fragrant. Add the Malaysian curry powder and cook for another minute until aromatic.
  2. Create the coconut broth
    Pour in the coconut milk and vegetable broth, stirring well to combine with the spices. If using belacan (shrimp paste), add it now. Bring the mixture to a gentle simmer and cook for about 5 minutes to allow the flavors to meld.
  3. Add the harder vegetables
    Add the carrots first as they take longer to cook. Allow them to simmer for about 5 minutes before adding the eggplant and tofu. Continue to simmer for another 5 minutes, stirring occasionally.
  4. Incorporate remaining vegetables
    Add the green beans and cabbage to the pot. Stir gently to ensure all vegetables are submerged in the coconut broth. Simmer for 8-10 minutes until all vegetables are tender but still retain some bite.
  5. Season and finish
    Season with salt and a pinch of sugar to balance the flavors. Taste and adjust seasonings as needed. Remove the lemongrass stalks before serving. Allow the curry to rest for 5 minutes off the heat to let the flavors develop further.
  6. Serve
    Ladle the Sayur Lodeh into bowls and serve hot with steamed rice, ketupat (rice cakes), or crusty bread for a complete meal. Garnish with fresh herbs like cilantro or fried shallots if desired.
