  1. Marinate the chicken
    In a large bowl, coat the chicken pieces with 1 tablespoon of the curry powder and a pinch of salt. Mix well and let it marinate for at least 20 minutes, or up to overnight in the refrigerator for deeper flavor.
  2. Prepare the spice base
    Heat oil in a large, heavy-bottomed pot over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent, about 5-7 minutes. Add the remaining curry powder, lemongrass, curry leaves, cinnamon sticks, and star anise. Stir continuously for 2-3 minutes until fragrant, being careful not to burn the spices.
  3. Cook the chicken
    Add the marinated chicken pieces to the pot and cook for 5-7 minutes, turning occasionally until the chicken is lightly browned on all sides. This helps to seal in the juices and develop more flavor.
  4. Add liquids and potatoes
    Pour in the coconut milk and chicken stock, stirring well to combine. Add the potato chunks and bring the mixture to a gentle boil. Reduce the heat to low, cover, and simmer for about 30 minutes, or until the chicken is tender and cooked through and the potatoes are soft.
  5. Season and reduce
    Remove the lid and simmer for an additional 10 minutes to allow the curry to thicken slightly. Taste and adjust seasoning with salt if needed. The curry should be rich and have a thick, slightly creamy consistency.
  6. Rest and serve
    Turn off the heat and let the curry rest for 5-10 minutes. This allows the flavors to meld together and the curry to cool slightly before serving. Remove the lemongrass stalks, cinnamon sticks, and star anise before serving. Serve hot with steamed rice or Malaysian roti canai.
