Prepare the doughIn a large bowl, combine flour, salt, sugar, and baking powder. Make a well in the center and add beaten egg, condensed milk, and 2 tablespoons of the melted ghee. Gradually add warm water while mixing until a soft, sticky dough forms. Knead for 5 minutes until smooth and elastic.

Rest the doughDivide the dough into 12 equal portions and shape each into a ball. Coat each ball with a thin layer of oil. Place the dough balls in a container, cover with a damp cloth or plastic wrap, and let rest for at least 3 hours or overnight at room temperature. This resting period is crucial for developing the flaky texture.

Stretch the doughWorking with one dough ball at a time, flatten it on an oiled surface. Using your palms and fingers, stretch the dough outward until it becomes very thin, almost translucent. Lift the stretched dough and gently pull it further, allowing gravity to help stretch it into a large, thin circle about 2 feet in diameter.

Fold the rotiFold the stretched dough inward from all sides to form a rectangular packet, then fold it in half to create a square. This folding technique creates the signature flaky layers of roti canai.

Cook the rotiHeat a flat griddle or heavy skillet over medium heat. Add a teaspoon of ghee and place the folded roti on the hot surface. Cook for 2-3 minutes until golden brown spots appear, then flip and cook the other side for another 2 minutes. Press down gently with a spatula to ensure even cooking.

Finish the rotiRemove the roti from the griddle. To create the signature texture, immediately clap the roti between your hands to separate the layers and make it fluffy. Alternatively, place it on a cutting board and lightly crush it by pressing with your fingers from the edges toward the center.

Serve hotServe the roti canai immediately while hot and crispy. Traditionally, it's accompanied by a small bowl of dal curry or chicken curry for dipping. The contrast between the flaky, buttery bread and the spicy curry makes for a delicious meal or snack.
