Prepare the noodlesIf using dried noodles, cook according to package instructions until al dente. Rinse under cold water, drain well, and toss with 1 teaspoon of oil to prevent sticking. If using fresh noodles, simply rinse briefly with water and drain well.

Marinate the chickenIn a small bowl, combine the chicken slices with 1 tablespoon of soy sauce and a pinch of salt. Mix well and set aside for 10 minutes while preparing other ingredients.

Make the sauceIn a bowl, combine kecap manis, sambal oelek, and light soy sauce. Mix well and set aside. This will be the main flavoring for your noodles, so adjust according to your preference for sweetness and spiciness.

Cook the proteinsHeat 1 tablespoon of oil in a large wok or frying pan over high heat. Add beaten eggs and quickly scramble until just set but still moist. Remove and set aside. Add another tablespoon of oil and stir-fry the marinated chicken until cooked through, about 3-4 minutes. Add the tofu cubes and stir-fry for another 2 minutes until lightly browned. Remove and set aside with the eggs.

Stir-fry the aromatics and vegetablesAdd the remaining oil to the wok. Add garlic and shallots and stir-fry for 30 seconds until fragrant. Add julienned carrots and cabbage and stir-fry for 2-3 minutes until vegetables start to soften but remain crisp.

Combine everythingAdd the prepared noodles to the wok and toss well with the vegetables. Pour the sauce mixture over the noodles and toss continuously to coat evenly. Return the cooked eggs, chicken, and tofu to the wok. Add bean sprouts and continue stir-frying for another 1-2 minutes until everything is well combined and heated through.

Final seasoningTaste and adjust seasoning with more soy sauce or sambal if needed. The noodles should have a balanced sweet, savory, and spicy flavor characteristic of Malaysian Mee Goreng.

ServeTransfer the noodles to serving plates. Garnish with lime wedges and chopped spring onions. Serve immediately while hot. For an authentic experience, accompany with additional sambal on the side for those who prefer extra spiciness.
