Spicy-sour fish stew with tamarind and aromatic herbs

Prepare the spice pasteBlend all the paste ingredients in a food processor until smooth, adding a splash of water if needed to help it blend. This creates the aromatic base for your Asam Pedas.

Cook the spice pasteHeat the vegetable oil in a large pot over medium heat. Add the blended spice paste and lemongrass. Sauté for 7-10 minutes until the paste darkens and becomes fragrant, and the oil begins to separate from the paste.

Add liquid and aromaticsPour in the tamarind water and 2 cups of water. Add the torch ginger buds (if using), half of the Vietnamese mint leaves, palm sugar, and salt. Bring to a boil, then reduce to a simmer for 5 minutes to allow the flavors to meld.

Cook the vegetablesAdd the tomatoes, eggplant, and okra to the simmering broth. Cook for about 8-10 minutes until the vegetables are just tender but not mushy.

Add the fishGently place the fish chunks into the broth, trying not to break them. Simmer for 5-7 minutes until the fish is just cooked through and flakes easily with a fork. Avoid stirring too vigorously to keep the fish pieces intact.

Final adjustmentsTaste and adjust the seasoning with more salt, palm sugar, or tamarind water if needed. The dish should have a perfect balance of sourness, spiciness, and a slight sweetness.

ServeSprinkle the remaining Vietnamese mint leaves over the top. Serve hot with steamed white rice. Traditional Malaysian custom is to eat this with your fingers, but providing spoons is perfectly acceptable.
