  1. Prepare the lotus root
    Peel the lotus root and slice it into 1/4-inch thick rounds. Immediately place the sliced lotus root in a bowl of cold water with a splash of vinegar to prevent discoloration. Rinse the pork ribs under cold water and pat dry with paper towels.
  2. Blanch the pork
    In a large pot, bring water to a boil. Add the pork ribs and boil for 3-5 minutes. Drain and rinse the pork under cold water to remove any impurities. This step helps create a clearer soup.
  3. Sauté the aromatics
    In a large soup pot, heat the vegetable oil over medium heat. Add the ginger slices and sauté for 1-2 minutes until fragrant. Add the blanched pork ribs and cook for another 2 minutes, stirring occasionally.
  4. Simmer the soup
    Add the water or chicken stock to the pot and bring to a boil. Drain the lotus root slices and add them to the pot along with the carrot chunks and red dates. Reduce heat to low, cover, and simmer for about 1 hour until the lotus root is tender and the soup is flavorful.
  5. Add the final ingredients
    Add the goji berries and continue to simmer for another 15 minutes. Season with salt and white pepper to taste. The soup should have a light, clear appearance with a subtly sweet flavor.
  6. Serve the soup
    Ladle the hot soup into bowls, ensuring each serving has some lotus root slices, pork, and other ingredients. Garnish with chopped green onions and cilantro if using. Serve immediately as a starter or as part of a larger meal.
