  1. Prepare the kofta mixture
    In a large bowl, combine the ground lamb, grated onion, minced garlic, chopped parsley, mint, cumin, coriander, paprika, cinnamon, cayenne pepper, and salt. Mix thoroughly using your hands until all ingredients are well incorporated.
  2. Shape the koftas
    Divide the mixture into 8 equal portions. Shape each portion into a sausage-like shape around metal or wooden skewers (if using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning). Press the meat firmly onto the skewers to ensure it stays in place during cooking.
  3. Chill the koftas
    Place the prepared koftas on a tray and refrigerate for at least 30 minutes to allow the flavors to meld and the meat to firm up, which will help them hold their shape during cooking.
  4. Cook the koftas
    Preheat a grill, grill pan, or broiler to medium-high heat. Cook the koftas for 3-4 minutes on each side, turning occasionally until they are browned on all sides and cooked through. The internal temperature should reach 160°F (71°C).
  5. Warm the flatbreads
    While the koftas are cooking, warm the flatbreads either on the grill for 30 seconds per side, in a dry pan, or wrapped in foil in a 350°F (175°C) oven for 5 minutes.
  6. Assemble the wraps
    Spread about 2 tablespoons of tzatziki sauce on each flatbread. Place 2 koftas on each flatbread (removing them from the skewers), and top with cucumber slices and diced tomatoes.
  7. Serve
    Fold the flatbreads over the filling to create wraps. Serve immediately with additional tzatziki sauce on the side for dipping.
