  1. Prepare the rice
    Soak the short-grain rice in cold water for 30 minutes, then drain well. This helps the rice break down more easily during cooking.
  2. Sauté the aromatics
    In a large pot, heat the sesame oil over medium heat. Add the minced garlic, ginger, and white parts of the green onions. Sauté until fragrant, about 1-2 minutes.
  3. Cook the mushrooms
    Add the sliced mushrooms to the pot and sauté for 3-4 minutes until they begin to soften and release their moisture. Stir in the soy sauce and continue cooking for another minute.
  4. Add rice and liquid
    Add the drained rice to the pot and stir to coat with the oil and mushroom mixture. Pour in the water or broth and bring to a boil.
  5. Simmer the porridge
    Once boiling, reduce the heat to low, cover, and simmer for about 30 minutes. Stir occasionally to prevent the rice from sticking to the bottom of the pot. The rice should break down and the porridge should thicken.
  6. Season and finish
    Add salt and pepper to taste. If the porridge is too thick, add a little more water or broth to reach your desired consistency. Simmer for an additional 5 minutes.
  7. Serve and garnish
    Ladle the hot porridge into serving bowls. Garnish with the green parts of the green onions, toasted sesame seeds, and strips of roasted seaweed. Serve immediately while hot.
