  1. Prepare the chicken
    In a large pot, add the chicken pieces and cover with water or chicken broth. Add half of the minced ginger and garlic, the white parts of the green onions, and 1 tablespoon of sesame oil. Bring to a boil, then reduce heat and simmer for about 40 minutes until the chicken is fully cooked and tender.
  2. Shred the chicken
    Remove the chicken from the broth and let it cool slightly. Shred the meat into bite-sized pieces, discarding the skin and bones. Strain the broth and return it to the pot.
  3. Cook the rice
    Add the rinsed rice to the chicken broth. Bring to a boil, then reduce heat to low. Simmer uncovered, stirring occasionally to prevent sticking, for about 25-30 minutes until the rice is very soft and the mixture has thickened to a porridge-like consistency.
  4. Season the porridge
    Add the remaining ginger and garlic, soy sauce, salt, and white pepper to the porridge. Stir well and continue to simmer for another 5 minutes. If the porridge becomes too thick, add more water or broth to reach your desired consistency.
  5. Add the chicken
    Return the shredded chicken to the pot and stir to combine. Simmer for another 5 minutes to allow the flavors to meld together. Taste and adjust seasoning if necessary.
  6. Serve
    Ladle the hot porridge into bowls. Drizzle with the remaining sesame oil and garnish with the green parts of the green onions, toasted sesame seeds, and strips of roasted seaweed. Serve immediately while hot.
