  1. Prepare the kenkey dough
    Divide the fermented corn dough into two equal parts. Place one half in a large pot and add water gradually while stirring to form a smooth paste. Add salt and place over medium heat. Cook, stirring continuously until partially cooked (about 10-15 minutes). The mixture should thicken substantially.
  2. Mix the kenkey
    Remove the pot from heat. Add the uncooked half of the dough to the pot and mix thoroughly until well combined. The mixture should be thick and somewhat sticky. Allow to cool slightly until it can be handled.
  3. Shape and wrap the kenkey
    Divide the mixed dough into 6-8 equal portions. Shape each portion into a ball or oblong shape. Soften banana leaves or corn husks by passing them briefly over an open flame. Place each portion of dough on a leaf or husk and wrap tightly, folding the edges to seal.
  4. Cook the kenkey
    Place a small rack or some corn husks at the bottom of a large pot. Arrange the wrapped kenkey on the rack and add enough water to cover halfway up the kenkey balls. Cover the pot and cook over medium heat for about 1-1.5 hours, adding more water if necessary. The kenkey is done when firm to touch.
  5. Prepare the fish
    While the kenkey cooks, make deep cuts on both sides of each fish. In a bowl, combine ginger paste, garlic, ground pepper, ground crayfish (if using), and salt. Rub this mixture all over the fish and into the cuts. Let marinate for at least 30 minutes.
  6. Fry the fish
    Heat vegetable oil in a deep frying pan until hot but not smoking. Carefully place the marinated fish in the hot oil and fry until golden brown and crispy on both sides, about 5-7 minutes per side. Remove and drain on paper towels.
  7. Prepare the accompaniments
    Arrange the sliced onions and tomatoes on a serving plate. Place the fried fish on top and serve with the chili pepper sauce (shito) on the side.
  8. Serve the meal
    Unwrap the kenkey and serve hot alongside the fried fish, fresh vegetables, and pepper sauce. Traditionally, kenkey is eaten by breaking off pieces with your fingers and dipping into the sauce before eating with the fish.
