
Japanese Miso Soup with Fish
A warming, umami-rich traditional Japanese soup

Prepare the dashiIn a large pot, heat the dashi stock over medium heat until it begins to simmer gently. Be careful not to let it boil vigorously.

Add the vegetablesAdd the shiitake mushrooms and wakame seaweed to the simmering dashi. Cook for about 5 minutes until the mushrooms become tender.

Mix in the miso pastePlace the miso paste in a small bowl. Ladle some hot dashi into the bowl and whisk until the miso dissolves completely. Pour this mixture back into the pot and stir gently. Never boil the soup after adding miso as it will destroy its flavor and nutritional benefits.

Cook the fish and tofuGently add the fish cubes and tofu to the soup. Simmer on low heat for about 5 minutes, until the fish is just cooked through and opaque.

Add the remaining ingredientsAdd the spinach leaves and grated ginger. Stir gently and cook for another minute until the spinach is just wilted.

Serve the soupLadle the soup into individual serving bowls. Garnish with sliced green onions and nori strips if using. Serve immediately while hot.
