Juicy Japanese-style hamburger with tangy demi-glace sauce

Prepare the meat mixtureIn a large bowl, combine ground beef and pork mixture with finely chopped onion, beaten egg, panko breadcrumbs, and milk. Add ketchup, Worcestershire sauce, salt, and pepper. Mix gently with your hands until just combined, being careful not to overmix.

Shape the pattiesDivide the mixture into 4 equal portions and shape each into an oval patty about 1-inch thick. Make a slight indentation in the center of each patty with your thumb to prevent it from puffing up during cooking.

Cook the hambaguHeat vegetable oil in a large skillet over medium-high heat. Add the patties and cook for about 3-4 minutes on each side until browned. Reduce heat to medium-low, cover, and cook for another 5-7 minutes until cooked through (internal temperature of 160°F/71°C).

Prepare the sauceRemove the patties from the skillet and set aside. In the same skillet with the meat juices, add beef stock, ketchup, Worcestershire sauce, and soy sauce. Bring to a simmer while scraping up any browned bits from the bottom of the pan. Simmer for 2-3 minutes until slightly thickened.

Serve the hambaguReturn the patties to the skillet, spooning some sauce over each one. Simmer for another minute to reheat the patties. Serve hot with the sauce poured over the top, accompanied by steamed rice and vegetables.
