Prepare the ricePlace the rinsed rice and water in a rice cooker and cook according to manufacturer's instructions. Alternatively, cook the rice in a heavy-bottomed pot: bring to a boil, reduce heat to low, cover and simmer for 15 minutes, then remove from heat and let stand covered for 10 minutes.

Make the donburi sauceIn a small bowl, combine the soy sauce, mirin, sake, sugar, and dashi stock. Stir until the sugar dissolves completely. This creates the sweet and savory base for your donburi.

Cook the onionsHeat vegetable oil in a large skillet over medium heat. Add the sliced onion and the white parts of the green onions. Sauté until the onions become translucent and slightly caramelized, about 5-7 minutes.

Cook the beefAdd the thinly sliced beef to the skillet with the onions. Cook, stirring occasionally, until the beef is no longer pink, about 3-4 minutes. The thin slices will cook quickly, so be careful not to overcook.

Simmer in saucePour the prepared sauce into the skillet with the beef and onions. Bring to a simmer and cook for 5 minutes, allowing the flavors to meld and the sauce to reduce slightly.

Add the egg (optional)If using eggs, pour the beaten eggs in a thin stream over the beef mixture. Cover the skillet and cook for 1-2 minutes until the eggs are just set but still slightly runny for an authentic texture. Skip this step if you prefer your donburi without eggs.

Assemble the donburi bowlsDivide the cooked rice among four deep bowls. Spoon the beef and sauce mixture over the rice, making sure to include plenty of the flavorful sauce. Garnish with the green parts of the sliced green onions, pickled ginger, and a sprinkle of toasted sesame seeds.
