  1. Prepare the tuna mixture
    In a medium bowl, combine the drained tuna, mayonnaise, lemon juice, chopped red onion, capers, sun-dried tomatoes, basil, and oregano. Mix well and season with salt and pepper to taste.
  2. Assemble the panini
    Lay out the bread slices or halved rolls. Spread the tuna mixture evenly on one half of each sandwich. Top with slices of fresh mozzarella cheese.
  3. Complete the sandwiches
    Close the sandwiches with the remaining bread slices or roll tops. Lightly brush the outside of each sandwich with olive oil on both sides to help with browning and to prevent sticking.
  4. Grill the panini
    Heat a panini press to medium-high heat. Once hot, place the sandwiches in the press and close the lid. Cook for about 3-5 minutes until the bread is golden and crispy and the cheese has melted.
  5. Alternative grilling method
    If you don't have a panini press, heat a heavy skillet over medium heat. Place the sandwiches in the pan and press down with another heavy skillet or pot. Cook for about 3 minutes per side until golden brown and the cheese has melted.
  6. Serve
    Remove the panini from the press or skillet, let cool for 1 minute, then cut in half diagonally. Serve immediately while hot and melty, optionally with a side of mixed greens dressed with olive oil and lemon juice.
