Add starch and form meatballsGradually add the tapioca starch to the meat mixture, folding gently until fully incorporated. With wet hands, scoop about 1-2 tablespoons of the mixture and roll into balls. Continue until all the mixture is used.

Cook the meatballsBring the beef broth to a gentle simmer in a large pot. Carefully drop the meatballs one by one into the simmering broth. Do not stir immediately as the meatballs are still fragile. Once the meatballs float to the surface (about 5-10 minutes), they are cooked.
