
Indian Chai Tea
Aromatic spiced tea with milk for a comforting hot beverage

Prepare the spicesCrush the cardamom pods, peppercorns, and cinnamon stick slightly to release their flavors. Peel and thinly slice the ginger.

Boil the water and spicesIn a medium saucepan, add water and all the spices (ginger, cardamom, cloves, cinnamon, peppercorns, and star anise if using). Bring to a boil, then reduce heat and simmer for 3-4 minutes to allow the spices to infuse.

Add tea leavesAdd the black tea leaves or tea bags to the spiced water. Simmer for another 2 minutes until the water turns a deep amber color.

Add milk and sugarPour in the milk and add sugar to taste. Stir well and bring the mixture back to a simmer. Let it simmer for 2-3 minutes until the chai develops a rich, creamy consistency.

Strain and serveTurn off the heat and let the chai sit for 1 minute. Strain the tea through a fine-mesh strainer or tea strainer into teacups or mugs. Serve hot immediately, preferably with cookies or traditional Indian snacks.
