  1. Prepare the chickpeas
    Drain and rinse the chickpeas thoroughly. For a smoother hummus, remove the skins by gently pinching each chickpea between your fingers until the skin loosens and comes off. This step is optional but recommended for ultra-creamy hummus.
  2. Blend the hummus
    In a food processor, combine the chickpeas, lemon juice, tahini, garlic, olive oil, cumin, and salt. Process until smooth, about 1-2 minutes. With the processor running, slowly add ice cold water one tablespoon at a time until the hummus reaches your desired consistency. Taste and adjust seasonings if needed.
  3. Prepare the pita chips
    Preheat the oven to 375°F (190°C). Cut each pita bread into 8 triangular pieces. Place the triangles in a single layer on a baking sheet. Brush both sides lightly with olive oil and sprinkle with a pinch of salt if desired.
  4. Bake the pita chips
    Bake the pita triangles for 8-10 minutes, flipping halfway through, until they are golden brown and crispy. Remove from the oven and let cool completely on the baking sheet.
  5. Serve the hummus
    Transfer the hummus to a shallow serving bowl. Using the back of a spoon, create a shallow well in the center. Drizzle with additional olive oil, sprinkle with paprika, and garnish with chopped parsley. Serve with the crispy pita chips on the side.
