  1. Prepare the prawns
    Rinse the peeled and deveined prawns under cold water, then pat them dry with paper towels. Season lightly with salt and pepper.
  2. Create the marinade
    In a bowl, combine 2 tablespoons of olive oil, half of the minced garlic, half of the lemon juice, lemon zest, and the dried oregano. Add the prawns and toss to coat. Let marinate for 10 minutes while you prepare the remaining ingredients.
  3. Cook the prawns
    Heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the prawns in a single layer and cook for 1-2 minutes on each side until they turn pink and slightly golden. Be careful not to overcook. Remove prawns to a plate and set aside.
  4. Make the sauce
    In the same skillet, add the remaining garlic and red pepper flakes (if using). Sauté for 30 seconds until fragrant. Pour in the white wine and let it simmer for 1 minute, scraping up any browned bits from the bottom of the pan. Add the remaining lemon juice and bring to a simmer.
  5. Combine and finish
    Return the prawns to the skillet and toss to coat in the sauce. Cook for another minute until the prawns are heated through. Remove from heat and stir in the fresh dill and parsley.
  6. Serve
    Transfer the prawns to a serving dish and sprinkle with crumbled feta cheese. Garnish with additional fresh herbs and lemon wedges if desired. Serve immediately with crusty bread for soaking up the delicious sauce.
