  1. Prepare the marinade
    In a large bowl, whisk together olive oil, lemon juice, red wine vinegar, minced garlic, oregano, thyme, lemon zest, salt, pepper, and paprika until well combined.
  2. Marinate the chicken
    Add the cubed chicken to the marinade and toss to coat thoroughly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably 4-8 hours for maximum flavor.
  3. Prepare the skewers
    If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning. Thread the marinated chicken pieces onto skewers, alternating with red bell pepper and red onion chunks.
  4. Preheat the grill
    Preheat your grill to medium-high heat (about 375-400°F). Oil the grates lightly to prevent sticking.
  5. Grill the skewers
    Place the skewers on the preheated grill and cook for 12-15 minutes, turning every 3-4 minutes to ensure even cooking on all sides. The chicken should reach an internal temperature of 165°F and have nice grill marks.
  6. Rest and serve
    Remove the skewers from the grill and let them rest for 5 minutes. Serve hot with lemon wedges for squeezing over the top and your favorite Greek side dishes.
